Chicken Breast in Parchment Paper

Simple, fast yet tasty chicken breast. Boneless, skinless chickens breast seems like a bit tricky since white meat might easily dry out in the oven. This is when the parchment paper is the best fit! With the parchment paper along with herbs and slices of citrus the chicken is moist, tender and juicy. This is due with the fact that the chicken steams in it's own juice when it is wrapped inside parchment paper and it helps retain that delicious flavor. The chicken can be used for sandwiches, salads, casseroles and much more!

For this simple recipe you will need:
- 1 medium boneless, skinless chicken breast
- Kosher salt, to taste
- Freshly ground pepper, to taste
- 1 tablespoon mixed herbs and spices of choice, optional
- 2 slices lemon, lime, or orange


Instructions:
Step 1: Heat over to 425 F
Step 2: Place parchment paper on cookie sheet and fold it in half to make sure the chicken will be wrapped.
Step 3: Place the chicken breast on the parchment paper and sprinkle with salt, pepper, herbs and spices, then top off with your choice of lemon, orange, or lime slices.
Step 4: Close the parchment paper, making sue that the edges are closed but with enough room to let the heat expand while the chicken is baking.
Step 5: Bake for 15-20 minutes or until the chicken registers 165F
Step 6: Remove the parchment paper carefully as to not burn yourself.
Step 7: Enjoy with your favorite side or in a sandwich
